My Kitchen experiences - PART TWELVE - Sweet potatoes with tomato and cheese topping

Ever heard about the health benefits of sweet potatoes?

They're high in vitamin B6, vitamin C and vitamin D.

They're a good source of iron and magnesium, the ultimate anti-stress mineral and help to relax your muscles.


But most importantly, they're super delicious, especially combined with veggies and cheese.

That's why I created this healthy recipe for you.




Ready for the ingredients list?


- 4 sweet potatoes
- 3 tomatoes
- 1 onion
- 1 clove of garlic
- 250 grams of ricotta cheese
- 200 grams of feta cheese
- a handful of black olives ( without stones)
- extra virgin olive oil
- thyme
- salt and pepper



- Cook the potatoes and chop them into thick slices

- Chop the tomatoes, onion and garlic.

- Mix the ricotta and feta cheese, add some olive oil, pepper, salt, thyme and black olives.






- Put the mix in a casserole, put this into the oven at 180 degrees for 30 minutes.
